Guacamole

Super Simple, Super Easy Guacamole.. I made this a few weeks ago for my nachos.. Yummy and a little spicy!

You will need:
  • Avocado's.. one medium size Haas avocado is good for one person. I happened to use two in this recipe
  • one small red onion. White onions are sweet.. Red onions have a certain spice to them that works perfect for guacamole.
  • Firm tomato.. this is optional.. I like tomato in my recipe.
  • Salt, also optional
  • Sharp knife
  • Cutting board
  • Potato smasher.
  • Large bowl
I didn’t think to do this as a tutorial of this, until after I cut the avocado and, took out the seed.. so boo to that. but it’s really easy. Take your sharp knife and insert it at the top, as if you were going to cut it in half, hold in the palm of your hand and rotate the knife around the seed till you get back to the top where you started. Twist and pull apart. Slap the knife, blade down into the seed. Making sure it’s stuck good twist both the knife and the avocado in opposite directions.. the seed should pop right out.

Using the knife the cut the avocado  so that it’s easier to scoop out.

Using a large spoon, scoop out all of the avocado down to the skin into your bowl.

Peel off the outside of the red onion.. which is more purple then red.. anyway.. Cut off the ends and dice half of it up. Dicing is just cutting it in thinly slices in one direction and then turning it and doing the same in the other. Add this to your large bowl.

Do the same to your tomato.. but bigger pieces. When you use the potato smasher it will break up the tomatoes. Add this to your bowl. Sprinkle a dash of salt. Mix well.. Then have a bit of fun with your potato smasher. Smash until you have the consistency you like. Taste and adjust as you see fit.
